Ingredients

250 grams bhindi (okra), washed, dried, and cut into 1-inch pieces
2 tablespoons oil (vegetable or mustard oil works best)
1 medium onion, finely chopped
1 medium tomato, finely chopped
2 green chilies, slit (optional for spice)
1 teaspoon cumin seeds
1 teaspoon ginger-garlic paste
½ teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
½ teaspoon garam masala
½ teaspoon dried mango powder (amchur) or lemon juice
Salt to taste
Fresh coriander leaves, chopped (for garnish)


Instructions

Step 1: Prepare the Bhindi


1. Wash the bhindi thoroughly and pat them completely dry with a clean kitchen towel. This step is crucial to avoid stickiness while cooking.

2. Trim the ends and cut the bhindi into 1-inch pieces.

Step 2: Sauté the Bhindi

1. Heat 1 tablespoon of oil in a non-stick or heavy-bottomed pan over medium heat.
